Potato Patchwork Casserole |

This casserole freezes well. Double the recipe and freeze half. Ingredients:
1 lb ground beef |
1 medium green pepper, chopped |
1/2 cup chopped onion |
4 cups cubed cooked potatoes |
1 (8 ounce) can tomato sauce |
1 (3 ounce) can tomato paste |
1/2 cup water |
1/2 teaspoon salt |
1 dash pepper |
1/4 teaspoon dry basil |
2 cups thinly sliced cheddar cheese |
Directions:
1. Preheat oven to 350 F. 2. Brown meat loosely in a frying pan. 3. Add green pepper and onion and cook until tender. 4. Stir in cooked potatoes, tomato sauce, tomato paste, water, salt, pepper and basil. 5. Spoon half of this mixture into a baking dish. 6. Cover with half the cheese slices. 7. Top with remaining potato mixture. 8. Cover dish and bake in preheated oven for 45 minutes. 9. Uncover. 10. Top with remaining cheese slices, cut in decorative shapes and arrange in a patchwork design. 11. Let stand 5 minutes or until cheese melts. 12. Serve hot. 13. Serves 6. |
