Potato Pancakes Or Erdaepfel Laibchen |

These are simple and delicious either as a side dish to meats or as part of a breakfast or brunch spread. Delicious as breakfast served with chunky apple sauce and bacon on the side. Ingredients:
2 medium-sized non-mealy potatoes |
1 small onion |
2 large eggs |
1/2 to 3/4 cup flour |
1/4 cup milk |
3 tbs melted butter |
pinch ground nutmeg |
salt and freshly ground black pepper to taste |
clarified butter or oil and butter for frying |
Directions:
1. Peel and grate potatoes into a small bowl. 2. Fill the bowl with very cold or ice water; set aside. 3. In a large bowl, beat together remaining ingredients until smooth. (Use 1/2 C flour at first, reserving the rest to use at need.) 4. Chop the onion finely. 5. Drain the grated potatoes and squeeze them dry in a dish towel. 6. Add potatoes and onion to liquid and mix well. If quite runny, add more flour. 7. Heat a griddle and grease it with either clarified butter or 1/2 oil, 1/2 butter. You want the butter flavor but it should not burn. 8. Measure out 1/4 cup batter for each Laibchen. Press down with the back of a spoon and spread it out to flatten it a bit. 9. Fry about 3-4 minutes or until brown; flip and cook other side. 10. The first ones keep well on a platter in a very slow oven until the rest are done. 11. You can also make a double recipe, freeze after cooking and reheat in a a 350° oven as needed. |
