great with homemade apple sauce or sometimes I add spicy salsa Ingredients:

* 4 large potatoes (russets are best) |
* 1 onion |
* 1 egg, beaten |
* 1 teaspoon salt |
* 1 cup of crushed saltines (premium plus crackers) |
* ground black pepper to taste ( or fresh chilli peppers) |
* 2 cups vegetable oil for frying |
Directions:
1. 1. Finely grate potatoes with onion into a large bowl. Drain off any excess liquid. 2. 2. Mix in egg, salt, and black pepper. Add enough crushed crackers to make mixture hold together. I crush them either using a blender, food processor, or by hand in a ziploc bag. The finer the crumbs the better. 3. 3. Heat 1/4 inch oil in the bottom of a heavy skillet over medium high heat. Drop two or three 1/4 cup mounds into hot oil, and flatten to make 1/2 inch thick pancakes. Fry, turning once, until golden brown. 4. Serve with applesauce and plain yogurt. |
