Another recipe from Strictly Thrifty Menus. Ingredients:
1/4 cup shortening |
2 eggs |
1/4 cup milk |
2 cups finely shredded raw potatoes, well drained and squeezed to get moisture out |
1/4 cup bisquick |
1 teaspoon salt |
1/2 teaspoon pepper |
1/2 teaspoon garlic powder |
Directions:
1. Melt shortening in large skillet. Beat eggs with whisk until fluffy; stir in milk, potatoes, baking mix, salt, pepper and garlic powder. Drop mixture by tablespoonfuls into hot shortening. Cook about 3 minutes on each side or until golden brown. Serve with Grilled Franks, Coleslaw and Apricot Jam Cake. |
