A simple potato pancake that is great served with almost any meal. Ingredients:
4 large potatoes |
1/4 cup onion, grated |
2 eggs, slightly beaten |
2 tablespoons flour |
3/4 teaspoon salt |
pepper |
cooking oil |
Directions:
1. Grate potatoes with a medium grater, drain well and pat dry. Measure 3 cups. 2. Combine potatoes with onions, eggs, flour, salt and pepper. 3. Heat oil in a skillet until very hot. For each pancake, drop potato mixture 2 tablespoons at a time into the hot oil. Fry 2 to 3 minutes of each side. |
