5 lbs russet potatoes, peeled |
1 medium onion |
3 eggs |
2 1/2 cups pancake mix |
1 tablespoon garlic, minced |
2 teaspoons salt |
1 teaspoon pepper |
canola oil |
Directions:
1. Using a food processor, grate potatoes and onion. Do not drain water. 2. In a bowl, beat eggs. 3. Stir in potato and onion. 4. Add pancake mix, minced garlic, salt and pepper. 5. Stir until well blended. 6. Heat 1 tablespoon oil in large frying pan. 7. Spoon 3 tablespoon sized portions of potato mixture into hot frying pan. 8. Fry 3 to 4 minutes on each side. |
