An excellent soup for any cold blustery day...Will make all the aches and pains fade away... Ingredients:
1 large onion, sliced thinly |
1/2 teaspoon salt |
2 tablespoons oil |
1 large garlic, minced |
4 large potatoes, peeled and sliced |
2 large celery stalks, sliced |
2 cups chicken broth |
1/2 teaspoon pepper |
1 cup milk |
8 oz sharp cheddar cheese, cubed or shredded |
minced parsley |
Directions:
1. Cook garlic, onion, celery, and potatoes in oil for 10 minutes; stir often. 2. Add broth, salt and pepper. 3. Boil; reduce heat and simmer for 20 minutes. 4. Stir in milk; heat through; add cheese and parsley. 5. Makes 4 servings. |
