Potato Onion Cheddar Soup

An excellent soup for any cold blustery day...Will make all the aches and pains fade away...
Ingredients:
1 large onion, sliced thinly
1/2 teaspoon salt
2 tablespoons oil
1 large garlic, minced
4 large potatoes, peeled and sliced
2 large celery stalks, sliced
2 cups chicken broth
1/2 teaspoon pepper
1 cup milk
8 oz sharp cheddar cheese, cubed or shredded
minced parsley
Directions:
1. Cook garlic, onion, celery, and potatoes in oil for 10 minutes; stir often.
2. Add broth, salt and pepper.
3. Boil; reduce heat and simmer for 20 minutes.
4. Stir in milk; heat through; add cheese and parsley.
5. Makes 4 servings.
