Potato, Onion, and Tomato Gratin |

From Dinner Parties, by Jessica Strand. This sounds like it would be a great and impressive side dish. I haven't tried it yet but think when I do that I might add some seasonings - maybe Italian seasoning or Herbes de Provence. Ingredients:
3 lbs baking potatoes, peeled and thinly sliced |
3 large yellow onions, thinly sliced |
2 lbs tomatoes, thinly sliced |
sea salt, to taste |
freshly ground pepper, to taste |
1/2 cup olive oil |
1 cup parmesan cheese, freshly grated |
Directions:
1. Coat bottom and sides of a large oval glass or ceramic gratin dish with 2. olive oil. 3. Arrange a layer of 1/2 of potatoes in the dish. 4. Top with 1/2 of onions, then 1/2 of tomatoes. 5. Sprinkle with salt and pepper. 6. Drizzle with 1/4 cup olive oil. 7. Sprinkle with 1/2 of cheese. 8. Repeat process to use remaining ingredients. 9. Bake in a preheated 375-degree oven about 1 1/4 hours or until golden 10. and bubbly. 11. Serve hot with fish or meat. |
