Adapted from a recipe in The Potato Harvest Cookbook by Ashley Miller. This bread requires no rising and is more like an Irish soda bread than a yeast bread. Ingredients:
3/4 cup white whole wheat flour |
3/4 cup whole wheat flour |
1 1/2 teaspoons baking powder |
1/2 teaspoon salt |
1/4 cup freshly grated parmesan cheese |
1/4 cup chopped kalamata olives or 1/4 cup green olives |
1 large garlic clove, minced |
1 cup mashed potatoes (1 large potato) |
1 large egg, beaten |
1/4 cup beer or 1/4 cup ale or 1/4 cup water |
Directions:
1. Preheat oven to 375 degrees. 2. Combine flours, baking powder, and salt, mixing well. 3. Stir in cheese, olives, and garlic. 4. Combine potatoes and egg, then stir into the flour mixture. 5. Add the beer or ale or water all at once and stir well for 30 seconds. 6. Turn the dough out onto a floured surface and knead gently for 30 seconds. 7. Form into a 5-inch round loaf and slash an 'x' across the top, dividing the loaf into four equal sections. 8. Transfer the loaf to a baking sheet and bake 45 minutes or until golden brown. 9. Cool on a wire rack. |
