Big taste in this hearty soup. Ingredients:
1/2 cup chopped onion |
1/4 cup butter |
2 tablespoons flour |
1 teaspoon garlic powder |
1/2 teaspoon thyme |
1 teaspoon salt |
1/2 teaspoon pepper |
3 cups water |
1/2 lb fresh mushrooms, sliced |
1 cup chopped celery |
2 cups diced potatoes |
1/2 cup chopped carrot |
1 cup light cream |
1/4 cup grated parmesan cheese |
Directions:
1. Saute onion in butter; add flour and seasonings. 2. Slowly add water, stirring. 3. Bring to a boil, cook 1 minute. 4. Add remaining ingredients, reduce heat and simmer for 30 minutes. 5. Add cream and cheese; heat through. |
