Great potato recipe. Goes great with salmon. Ingredients:
1 russet potato, cubed |
1 red potatoes, cubed |
1 sweet potato, peeled and cubed |
2 tablespoons olive oil |
2 tablespoons balsamic vinegar |
2 teaspoons fresh thyme, minced |
3 garlic cloves, minced |
1/4 cup chicken broth |
Directions:
1. Preheat oven to 375 degrees Fahrenheit. 2. Combine all ingredients in a mixing bowl and toss to coat. 3. Roast uncovered in a casserole dish for 50 to 60 minutes or until tender. |
