Rich in nutrients and easy on the digestive system, this is a healthy and gentle tasting rainy day dish. Ingredients:
1 big carrot, chopped |
3 small potatoes, cubed |
1 (19 fluid ounce) can lentils |
2 big garlic cloves, diced |
1 1/2 tablespoons olive oil |
1 1/2 teaspoons unsweetened coconut, shredded |
salt and pepper |
2 tablespoons fresh parsley, chopped |
Directions:
1. Chop carrot and potatoes and cook in boiling water. 2. Drain lentils and prepare garlic. 3. Once cooked, remove carrot and potatos from boiling water and combine with lentils, oil and garlic in a frying pan. 4. Add salt and pepper to taste. 5. Cook on medium until heated through, stirring regularly. 6. Sprinkle coconut and parsley near end of cooking time and stir to mix the flavours. 7. Serve and enjoy! |
