Potato Leek Soup Aka Vichyssoise |

Vichyssoise! Quite possibly the perfect soup. Prepare yourself for taste bud overload! Ingredients:
6 medium leeks, white part only, coarsely chopped. |
3 tablespoons unsalted butter. |
2 medium russet potatoes, peeled, diced. |
2 cups chicken stock. |
salt to taste. |
1/8 tsp. white pepper. |
2 cup heavy cream. |
chopped chives for garnish. |
Directions:
1. Sweat leeks in butter over medium low heat until translucent only, do not brown, about 5 minutes. 2. Add potatoes, chicken stock, and salt. bring to boil. 3. Simmer over medium low heat for 30-35 minutes until potatoes and leeks are very soft. 4. Remove from heat and stir in white pepper and cream. 5. Puree thoroughly with stick blender or food processor and chill in refrigerator 90 minutes or until cold. 6. Serve cold garnished with chives. |
