A warm soup for a cold day Ingredients:
230 grams leeks, chopped and rinsed well |
1 tablespoon butter |
425 grams red potatoes, peeled and chopped |
1 teaspoon salt |
1 teaspoon pepper |
2 cups chicken broth |
1/2 cup water |
Directions:
1. Saute leeks in butter until wilted. Add the broth, water, potatoes, salt and pepper. Simmer until the potatoes are soft, about 1/2 hour. Remove 1 cup soup to a blender and puree, return to pot and stir in. Serve hot. |
