Potato Leek Soup with low fat, low salt chicken broth Ingredients:
1/2 tbsp olive oil |
1 clove garlic |
1 cup celery |
3 leeks |
2 lbs potatoes |
1/2 tsp black pepper |
6 cups chicken broth |
1 cup 2% milk |
Directions:
1. Saute garlic and celery in olive oil until celery is tender. 2. Add leeks. Saute for a few minutes. 3. Add pepper and chicken broth. 4. Add potatoes. 5. Cook until potatoes are tender. 6. Blend in food processor. Add milk. |
