Low-fat, quick & easy potato leek soup Ingredients:
3 cups potatoes, chopped |
1 cup leeks, sliced |
1/2 cup onion, diced |
3 cloves garlic, diced |
6 cups vegetable broth |
2 tbsp salt |
2 tbsp black pepper, cracked |
2 tsp oregano |
2 tsp thyme |
1 cup fat-free yogurt |
2 tbsp olive oil |
1/2 cup celery, chopped |
2 tbsp chives |
Directions:
1. In soup pan, heat olive oil. Saute leeks, onion, garlic, and celery until soft. 2. Add potatoes, salt and pepper, and vegetable broth. Bring to a boil. 3. Reduce heat to medium and add spices. 4. Continue to cook for 30-45 minutes, or until reduced to desired thickness. 5. Turn off heat and allow soup to cool a bit. 6. Add in yogurt and stir until creamy. Serve immediately. Garnish with chives. |
