Creamy and flavourful. Ingredients:
2 tablespoons butter |
2 medium leeks, chopped |
1 small onion, chopped |
1 carrot, chopped |
2 stalks celery, chopped |
4 cups chicken broth |
2 cups water |
4 medium potatoes, chopped |
1/2 teaspoon celery seed |
3/4 teaspoon dried thyme |
1/4 teaspoon basil |
1 cup milk |
1/2 cup white wine |
salt and pepper |
1/4 cup chopped parsley |
Directions:
1. Saute leeks, onion, carrot and celery in butter in a stockpot or large saucepan. 2. Add chicken broth, water, and potatoes and bring to boil. 3. Simmer 15 minutes. 4. Puree mixture in batches in blender, and return to pot. 5. Add milk and wine and reheat. 6. Add salt and pepper to taste. 7. Serve topped with parsley. |
