Potato Latkes (pancakes) A dish that can be served morning or noon for the main dish. Can also be used as a side for dinner. Ingredients:
2 eggs |
1/3 cup all-purpose flour |
1/4 cup grated onion |
1/4 tsp. ground black pepper |
4 large potatoes, peeled and shredded ( about 4 cups ) |
3 tbs. lite margarine, divided |
1 1/2 cups sweetened applesauce |
fresh chives, for garnish |
Directions:
1. Method: 2. In a large bowl, combine eggs, flour, onion and pepper; set aside. 3. Pat the shredded potatoes dry with paper towels. Stir into egg mixture. In a large non-stick skillet, over medium-high heat, melt 1 1/2 Tbs. margarine. For each pancake, spoon 1/3 cup of the potato mixture into skillet, spreading into a 4-inch circle. Cook for 3 minutes each side or until golden; remove and keep warm. Repeat with the renaming mixture, using the melted margarine as need to make 12 pancakes. Serve hot with applesauce on the side. Garnish with chives. |
