I did a take on a traditional recipe - the latka is a very typical recipe and I just took it outside of the box a little Ingredients:
2 1/2 cups potato (peeled and shredded) |
1/2 cup onion (shredded) |
1 egg (beaten) |
1/2 cup bread crumbs (unflavored) |
salt and pepper to taste |
1 tsp garlic (minced |
1/4 tsp nutmeg (fresh grated) |
Directions:
1. Combine all the ingredients and shape in rounds - heat a pan either cast iron or non stick - spray with cooking spray - place into pan and over medium low heat cook for 20 minutes on one side flip and cook for an additional 20 minutes - keep covered. 2. Check from time to time to make sure they are not burning you may have to add a little oil. 3. Remove to a plate with a paper towel - soaking any oils off. 4. Serve with sour cream while still warm. |
