Potato Kugel With Prune Topping |

Differnetly delcious yam and potato casserole topped with a sweet fruit and nut mixture. May be made year round, Just sub the matzo meal with a little flour instead Ingredients:

2 medium fresh yams |
2 medium russet potatoes |
3 eggs |
1/3 cup onion, finely chopped |
3 tablespoons matzo meal |
1 tablespoon margarine |
3/4 teaspoon salt |
1/8 teaspoon ground pepper |
haroset: ( chopped sweet fruit and nut melange ) |
1 cup orange essence prunes (or regular prunes) |
1/4 cup honey |
3/4 cup dried apricots |
2 small red delicious apples, cored and quartered |
1/2 cup walnuts, chopped |
1/4 cup sweet white wine |
topping |
1 cup prune haroset |
1/3 cup orange essence prunes |
1 cup chopped apple |
1/4 cup apricot jam |
Directions:
1. Kugel: 2. Heat oven to 375 degrees. 3. Coat a 9-by-9-inch baking pan with vegetable cooking spray. 4. Thinly slice yams and potatoes; place in separate bowls, cover with water. 5. Whisk together eggs, onion, matzo meal, margarine, salt and pepper. 6. Drain water from potatoes and yams. 7. Arrange potatoes in baking pan to within 1/2-inch of edges; top with yam slices. 8. Pour egg mixture over yams. 9. Cover with aluminum foil. 10. Bake 1 hour or until potatoes are soft when pierced. 11. Haroset: 12. Meanwhile, in food processor bowl, place all ingredients for haroset. 13. Process until coarsely chopped or to desired consistency. 14. Reserve 1 cup haroset for topping; serve remaining haroset as you wish. 15. Kugel: 16. In a medium bowl, combine ingredients for topping. 17. Remove foil from potatoes and spoon topping over kugel. 18. Bake uncovered, 10 minutes. 19. Cut into 8 squares. |
