This is a lovely summery potato dish, it is great as a snack or as part of a main dish, hot or cold Ingredients:
5 medium sized white potatoes |
1/4 medium white onion |
1 clove garlic |
2 medium sized juicey tomatoes |
1/2 medium red chilli (deseed if want) |
1/2 teaspoon mustard seeds |
1/4 teaspoon thai allspice |
a pinch off oregano |
olive oil |
salt |
ground black pepper |
Directions:
1. Cut up potatoes into cubes and boil in salted water 2. Once these are cooked put to one side 3. Finely chop onion and garlic and add to a hot frying pan that has plenty of olive oil 4. Fry the onion and garlic for a moment or two and add the potatoes and tomatoes, mustard seeds, chilli, allspice and oregano 5. When to onions are nice and soft you are ready... 6. add a little salt and plenty of black pepper 7. Serve |
