Any vegetable or meat can be added to this versatile soup. Ingredients:
2 tablespoons olive oil |
1 large onion, thinly sliced |
3 cloves garlic, finely chopped |
1 teaspoon ground cumin |
4 medium potatoes, peeled and cubed |
1 cup green chili, chopped |
6 cups vegetable broth |
4 cups yellow hominy, canned,rinsed and drained |
1/4 cup cilantro, chopped |
Directions:
1. Heat the oil in a medium-sized pot, and saute onion and garlic for 3 minutes. 2. Add the cumin, stir well, then add the potatoes and green chilies. 3. Cook over medium heat, stirring occasionally, another 5 minutes. 4. Add the vegetable broth and hominy. 5. Simmer the soup, covered, over low heat for 45 minutes. 6. Stir in the cilantro and serve hot. |
