One of my favorite potato recipes. Full of so many great herbs and unique flavors. Enjoy
Ingredients:
3 large potatoes diced
1/4 cup vegetable broth
1 cup white onion chopped
1 cup green pepper chopped
1 cup red pepper chopped
1 cup corn kernels
1 teaspoon thyme
1/2 teaspoon tarragon
1/2 teaspoon salt
1 teaspoon salt
1 teaspoon freshly ground black pepper
2 tablespoons butter
Directions:
1. Parboil diced potatoes until tender then drain.
2. In a large skillet combine stock, onion and peppers.
3. Cook over medium heat for 5 minutes then add corn and cook 5 minutes longer.
4. Add vegetables to potatoes and toss with thyme, tarragon, salt and pepper .
5. Wipe out skillet and heat butter.
6. Add potato mixture to skillet and cook until potatoes being to turn golden.
