One of my favorite potato recipes. Full of so many great herbs and unique flavors. Enjoy Ingredients:
3 large potatoes diced |
1/4 cup vegetable broth |
1 cup white onion chopped |
1 cup green pepper chopped |
1 cup red pepper chopped |
1 cup corn kernels |
1 teaspoon thyme |
1/2 teaspoon tarragon |
1/2 teaspoon salt |
1 teaspoon salt |
1 teaspoon freshly ground black pepper |
2 tablespoons butter |
Directions:
1. Parboil diced potatoes until tender then drain. 2. In a large skillet combine stock, onion and peppers. 3. Cook over medium heat for 5 minutes then add corn and cook 5 minutes longer. 4. Add vegetables to potatoes and toss with thyme, tarragon, salt and pepper . 5. Wipe out skillet and heat butter. 6. Add potato mixture to skillet and cook until potatoes being to turn golden. |
