Potato Halves with Salmon
Ingredients:
1 1/2 lb baby red potatoes (18 potatoes) cut in half
2 tbsp water
1 tbsp olive oil
1/4 cup sour cream
4 oz smoked salmon
1 tbsp fresh dill
Directions:
1. Place potatoes and water in a large bowl. Cover with plastic wrap and microwave for 5-6 minutes.
2. Prepare an outdoor grill for grilling.
3. Brush potatoes with olive oil and sprinkle with salt and pepper. Place potatoes on the rack and grill 5 to 6 minutes turning over once.
4. Arrange potatoes round side down on a serving platter. Top each with 1/4 tsp sour cream, a piece of salmon and a piece of dill.
