Potato Ground Beef Casserole |

We really didn't like this recipe. It was really fast and easy to make, and cheap...but just not something I would make again. This reminds me of something you might eat camping, like Hobo dinner, except I like Hobo dinner better. :) Ingredients:
5 1/4 ounces of pillsbury hungry jack mashed potato flakes |
1 1/2 cups sour cream |
1/2 cup water |
1 lb ground beef |
2 (8 ounce) cans tomato sauce |
12 ounces corn mixed with chopped peppers, undrained |
1/2 cup water |
1 teaspoon salt |
1 tablespoon instant minced onion |
1/4-1/2 teaspoon pepper |
1/8 teaspoon oregano |
1/2 cup diced process american cheese or 1/2 cup cheddar cheese |
Directions:
1. Preheat oven to 350°F. 2. In ungreased 13x9 inch baking dish, blend dry potato flakes with sour cream and 1/2 cup water (mixture will be crumbly). 3. Pat firmly into bottom of baking dish. 4. In large skillet, brown ground beef, stir in 1/2 cup water and remaining ingredients except cheese. 5. Spoon beef mixture over potato mixture. 6. Top with cheese. 7. Bake 25 to 30 minutes until cheese is melted and bubbly. |
