I received a BJ's Club magazine and cut this recipe from it. It sounds very easy and wanted to post it here for safekeeping. My daughter loves Gnocchi! Ingredients:
1 cup mashed potatoes (boston market for example) |
2 egg yolks |
1/8 teaspoon nutmeg |
1/8 teaspoon salt |
1/8 teaspoon black pepper |
1/2 cup parmesan cheese (divided) |
1/2 cup flour |
1/2 cup tomato sauce (your choice) |
Directions:
1. Mix potatoes, egg yolks, seasonings, flour and 1/2 of the cheese. 2. On a floured surface, roll into 1 1/2 inch tubes and cut them into 1 1/2 inch long segments. 3. Put these in boiling, salted water. 4. When they float to the top, cook an additional 2 to 3 minutes. 5. Toss with hot tomato sauce, finishing with the remainder of the cheese. |
