Potato Gnocchi and Mushrooms in Gorgonzola Sauce |

from 'simple Vegetarian Pleasures' My family polished off this dish in record time, definitely a keeper. Ingredients:
1 tablespoon olive oil |
8 ounces fresh mushrooms, thinly sliced |
1 lb potato gnocchi (frozen or vacuum packed) |
2 garlic cloves |
1/4 cup milk |
2 ounces gorgonzola, crumbled |
2 tablespoons parsley, minced |
1/4 teaspoon salt |
ground pepper |
Directions:
1. bring large pot of water to a boil. 2. heat oil in a large skillet over medium-high heat. 3. saute mushrooms until juices are reabsorbed stirring often. 4. cook gnocchi according to package directions. 5. add garlic to mushrooms and cook 2 minutes. 6. stir in milk, cheese, parsley, salt and pepper and toss 7. drain gnocchi and add it to skillet tossing until cheese melts, about 1 minute. |
