This is a good different southern side dish to use for breakfast, or as a side dish. Ingredients:
1 1/2 c. frozen hash browns |
2 large eggs, separated |
3/4 tsp salt |
1/3 c. sifted, all purpose flour |
1/3 c. cooking oil |
Directions:
1. Rinse frozen potatoes in hot water until defrosted, drain 2. In mixing bowl beat egg whites with salt until stiff peaks. 3. In another bowl beat yolks lightly, pour over egg whites. Fold. 4. Sprinkle in flour, fold, fold in potatoes. 5. Heat oil 6. Drop batter by tablespoons. 7. Fry one min on each side. |
