Filling egg and potato dish for breakfast, brunch, lunch or dinner. Ingredients:
5 medium potatoes |
1 large onion |
2 tablespoons olive oil |
1 green pepper |
3 small tomatoes |
12 large eggs |
5 slices swiss cheese |
Directions:
1. Lightly cook peeled, diced potatoes in oil, add onion and green pepper, cook until soft. Add chopped tomatoes and cook 2-3 minutes more. Scramble eggs in bowl and pour over potato mixture. Bake in 400 oven for 15 minutes or until set. Top with sliced swiss cheese and bake 5 minutes more. |
