Crispy crunchy fish. Great for a quick weeknight meal. Ingredients:
1 cup flour |
3 eggs |
1/4 cup dijon mustard |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1 teaspoon garlic powder |
3 -4 cups instant potato flakes (or buds) |
1/4 cup oil (for frying) |
12 (4 -6 ounce) tilapia fillets |
Directions:
1. In a shallow dish, whisk together the egg, mustard, and salt and garlic powder; set aside. (I place in fridge for 15 minutes to blend flavors 2. Place the flour and potato flakes in 2 other shallow dishes. 3. Heat oil in a large heavy skillet over medium-high heat. 4. Dredge fillets in flour. Shake off excess 5. Dip fish fillets in the egg mixture. 6. Dredge the fillets in the potato flakes, completely coating the fish. For extra crispy, dip into egg and potato flakes again. 7. Fry fish fillets in oil for 2 to 3 minutes on each side, or until golden brown. |
