Potato, Fontina, and Oregano Pizza |

This pizza makes use of melted, or caramelized onions instead of tomato sauce as the base for the toppings. You can use Melted Onions or Tomatoes for them. Plan ahead as the onions take several hours to prepare properly. Ingredients:
pizza dough, for a 12-inch pizza |
1/4 cup melted onions (melted onions or tomatoes) or 1/4 cup caramelized onion (melted onions or tomatoes) |
1 yukon gold potato |
1/3 cup fontina cheese, grated |
2 tablespoons fresh oregano |
2 tablespoons parmesan cheese or 2 tablespoons grana padano, grated |
kosher salt |
fresh ground black pepper |
Directions:
1. Preheat broiler; prepare dough according to your favorite recipe or package directions. 2. Spread onions over pizza dough. 3. Use a mandoline and cut potato into 1/16-inch slices; spread over onions. 4. Sprinkle with cheeses and oregano; season with salt and pepper. 5. Place pizza on a pizza stone and cook under the broiler until edges are golden, 6 to 8 minutes; be sure to rotate pizza every 2 minutes for even cooking. 6. Remove from oven, slice and serve. |
