vegeterian dish Ingredients:
1 pound potatoes |
2 tsp oil |
2 onions, medium, chopped |
2 tsp garlic, minced |
2 tbsp ginger, grated |
1 tbsp cumin |
2 tsp coriander |
1 tsp curry |
540 ml tomatoes, chopped |
2 cups peas, chick |
1 chili pepper, minced |
1 tbsp lemon juice |
Directions:
1. Cut potatoes into bite size pieces and boil until cooked, drain. 2. Heat oil, add onion....to curry, saute until onions are tender ~12mins 3. Stir in remaining ingredients (add 1/4cup fresh cilantro at this time if wanted) 4. cover adn simmer until tomatoes have cooked down 7-10minutes 5. add potatoes and stir 6. serve with plain yogurt or add 1 cup, stir and cover and let stand 10min before serving 7. servie |
