My Grandmother used to make these. It was always fun to help her curl them. Ingredients:
1 cup mashed potatoes |
1/2 cup sugar |
2 tbsp. butter |
1 tsp. vanilla |
2 cups flour |
2 tsp. baking powder |
2 eggs yolks |
oil for frying |
powdered sugar for dusting |
Directions:
1. Mix potatoes, sugar, butter, vanilla, and yolks. Add flour and baking powder to form dough. 2. You can divide the dough so it's easier to handle. Roll it out. You don't want to cut them real thick. Cut triangular pieces and make a slit in the middle. Tuck one point of the triangle into the slit and pull through (not hard; you don't want to rip them). 3. When oil is hot enough, very carefully put the triangles in. They will sink to bottom, but real quick pop up. When they pop up, flip them so they are light golden brown (which does not take very long) on each side. 4. Take them out, dust with powdered sugar, and enjoy! 5.
