baked puffy mashed potato cupcakes
Ingredients:
5 potatoes
3 eggs (beaten)
1 tablespoon chicken fat (substitute melted butter)
salt and pepper (to taste)
Directions:
1. peel, boil and mash potatoes, cool
2. add eggs, fat, salt and pepper
3. fill greased muffin tins 3/4 full
4. bake at 350 degrees F. about 45 minutes. cupcakes should be soft and fluffy
