A great alternative to deep frying...From Country Cooking Ingredients:
1 cup instant potato flakes |
1/3 cup parmesan cheese, grated |
1/2 tsp. celery salt |
1/4 tsp. garlic powder |
1/2 stick butter, melted and cooled |
2 eggs |
4-5 cups assorted vegetables,(mushrooms, peppers, broccoli, zucchini, eggplant, onion or anything you like) |
ranch dressing to dip |
Directions:
1. Preheat oven to 400 2. In mixing bowl, add potato flakes, cheese, celery salt, garlic powder, and butter and mix until combined 3. In another bowl, beat eggs 4. Dip veggies into egg, then into potato mixture and coat well 5. Bake on baking sheet for 20-25 minutes |
