Ingredients:
1/2 teaspoon(s) cayenne pepper |
2 eggs |
1 cup(s) flour |
1 cup(s) instant potato flakes |
1 lime |
1/2 teaspoon(s) pepper |
2 teaspoon(s) salt |
4 tilapia filets or chicken breast |
vegetable oil |
Directions:
1. In a shallow dish combine the following: 2. cup flour 3. Salt and Pepper 4. In second shallow dish mix together two eggs 5. In third shallow dish combine the following: 6. cup instant potato flakes 7. The zest of one lime 8. /2 teaspoon cayenne pepper 9. teaspoons salt 10. /2 teaspoon pepper 11. Dredge either 4 tilapia fillets or 4 chicken breast in the flour, shake off the excess and dip in the eggs. 12. Then dredge and coat with the potato mixture. 13. Pan fry in about a 1/2 inch of vegetable oil. |
