My way to use leftover mashed potatoes. I really like these with breakfast.
Ingredients:
leftover mashed potatoes
eggs (about 1 egg per cup of mashed)
flour as needed
garlic and onion powder to taste
bread crumbs
Directions:
1. Mix eggs with potatoes, spices and flour until mixture is firm.
2. Pat into a patty
3. roll in bread crumbs
4. lay on wax paper
5. refrigerate 1 hour if you have the time
6. heat oil(thin layer)
7. fry 5 minutes each side
8. serve with a little warmed sour cream if desired
