Potato Corn and Canadian Bacon Chowder |

From 1001 Slow Cooker Recipes Ingredients:
3 cups chicken broth |
3 cups red potatoes, peeled and cubed |
2 cups corn |
1 large onion, chopped |
1 garlic clove, minced |
6 ounces canadian bacon, julienned |
1 large bay leaf |
3/4 teaspoon thyme |
1/4 teaspoon dry mustard |
2 cups whole milk, divided |
2 tablespoons cornstarch |
salt and pepper |
Directions:
1. Combine all ingredients except milk, cornstarch, salt and pepper in slow cooker; cover and cook on high for 4-5 hours, adding 1 1/2 cups milk during last 30 minutes. 2. Discard bay leaf. Process half the soup in food processor or blender until smooth; return to slow cooker. 3. Cover and cook on high for 10 mintues; stir in combined 1/2 cup milk and cornstarch, stirring 2-3 mintues. Season to taste with salt and pepper. |
