Potato Chip Crab Cakes

This is a different combo for crab cakes...I think you will like it..
Ingredients:
6 oz cooked crab meat
1 beaten egg
1/2 cup finely crushed potato chips
2 tablespoons shredded coconut, toasted
2 tablespoons finely chopped green onion
2 tablespoons mayonnaise
1 tablespoons fresh parsley, chopped
1/2 teaspoon ground coriander
2 tablespoons cooking oil
Directions:
1. In a medium bowl combine, 1/4 cup of the potato chips crushed, coconut, green onions, mayonnaise, parsley and coriander.
2. Stir in crabmeat.; mix well.
3. Shape mixture into 8 patties and coat with rest of crushed potato chips.
4. In a large skillet heat oil; add crabcakes .
5. Cook over medium heat for 2 or 3 minutes, on each side.
6. Serve with your favorite sauce.
