Grandma Rall made this recipe lots, using up potato chip crumbs (usually stale) that nobody wanted. Walnuts add even more crunch to this unusual cookie. Ingredients:
1 cup shortening |
1 cup white sugar |
1 cup brown sugar |
2 eggs |
1 teaspoon vanilla extract |
2 cups all-purpose flour |
1 teaspoon baking soda |
1/2 teaspoon salt |
2 cups crushed potato chips |
1 cup chopped walnuts (optional) |
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). 2. In a large bowl, cream together the shortening, white sugar, and brown sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Combine the flour, baking soda, and salt; gradually stir into the creamed mixture. Finally, fold in the potato chips and walnuts. Drop by rounded spoonfuls onto an unprepared cookie sheet. 3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. |
