Ingredients:
2 large potatoes |
2 tablespoons finely chopped celery |
1 tablespoon finely chopped onion |
1 tablespoon finely chopped or grated carrot |
2 cups chicken broth |
1 teaspoon salt |
2 teaspoons white vinegar |
2 tablespoons flour |
1 1/2 cups nonfat milk |
1 cup shredded cheddar cheese |
Directions:
1. In a large saucepan combine the vegetables, chicken broth, salt and vinegar over medium heat. 2. Bring to a boil, then simmer 20 minutes. 3. Whisk together the flour and nonfat milk. 4. Add the flour and milk mixture to the vegetable and broth mixture and continue simmering 5 to 8 minutes. 5. Add the cheddar cheese, it is ready to serve when the cheese is melted and the potatoes are tender. |
