8 potatoes, cooked and coarsely mashed |
1/4 cup unsalted butter |
2 cups shredded cheddar cheese |
1 teaspoon salt substitute |
1/3 cup chopped chives |
16 fluid ounces sour cream |
1/8 teaspoon pepper |
Directions:
1. Melt the butter and cheese in a saucepan. 2. Remove from the heat and add the sour cream, chives, salt and pepper. 3. Fold into the mashed potatoes and place in a greased casserole dish. 4. Cover and bake at 325°F for 25 minutes. 5. Uncover, sprinkle more grated cheese on top, and return to the oven just until cheese is melted. |
