Potato & Carrot Dumplings |

This is my variation on a recipe from the American civil war. Ingredients:
4 large potatoes |
4 medium carrots |
2 cups water |
1 pinch salt and pepper (to taste) |
Directions:
1. Wash potatoes and carrots carefully. 2. Grate the potatoes & carrots together. 3. Let drain in a colander to get rid of excess moisture. 4. Press the carrots & potatoes together into a small or large ball. 5. Steam in the water in a steaming basket for about 2-3 minutes. 6. Optionally you could boil them until they float to the serfice of the boiling liquid(the liquid just has to be drinkable & not poisonious to anybody). 7. Add salt and pepper then serve. |
