This tangy, salad just steals the show. It goes together quickly and disappears quickly.
Ingredients:
4 cups cold,cooked, broccoli pieces (cool after microwaving)
1/4 cup chopped onion
1 cup pitted, halved kalamata olives
2 cups cold, cooked potatoes, cut into cubes
1/3 cup olive oil
1/3 cup white vinegar
1 clove garlic, pressed
1/2 tsp pepper
1/3 cup finely grated parmesan cheese
2 or 3 slices crisply cooked bacon, crumbled
Directions:
1. Toss the potatoes, broccoli, onion, olives until well mixed
2. Mix the oil, vinegar, garlic, pepper, Parmesan cheese with a whisk and pour over the vegetables
3. Toss vegetables and add crumbled bacon to the mix.
4. Regrigerate for an hour before serving for flavors to blend
