Yummy potato, bacon, and egg casserole. The flavors meld together into a cohesive taste explosion. I actually came up with this for a friend's birthday party weekend I was catering. Totally off the wall and it was so good. Enjoy! Ingredients:
4 russet potatoes, cut into small chunks |
5 slices bacon, cut into 1/2-inch pieces |
1 tablespoon butter |
2 cloves garlic, pressed |
1 teaspoon salt |
1 teaspoon ground black pepper |
6 eggs, beaten |
1 tablespoon dried oregano |
1 cup shredded cheddar cheese |
Directions:
1. Preheat oven to 400 degrees F (200 degrees C). 2. Mix potatoes, bacon, butter, garlic, salt, and black pepper together in a 8x8-inch pan. 3. Bake in the preheated oven until potatoes are tender, 30 minutes. Reduce heat to 350 degrees F (175 degrees C). 4. Pour eggs over potato mixture; season with oregano. Stir gently to incorporate. 5. Bake in the preheated oven until eggs are set and cooked through, about 10 minutes. Sprinkle with Cheddar cheese; bake until cheese is melted, about 2 more minutes. |
