I found this recipe on cooking for a crowd. It is perfect for cooking for cash food group and those who have large families especially when there is a holiday or family reunion. Ingredients:
5 lbs. grated potatoes |
8 cups milk |
12 eggs |
2 cups each cooked sausage and ham |
2 cups each cheese and cooked bacon |
Directions:
1. Spray two 18 x 10-inch casserole pans. 2. Spread grated potatoes, add meats and cheese and mix lightly. 3. For each 25 servings, add 1 teaspoon salt and 1/8 teaspoon pepper to milk. 4. Beat eggs and milk, pour over potatoes. 5. Bake at 350 degrees until set - 1 to 1 1/2 hours. 6. Serves 50 |
