Potato Breakfast Burritos |

This dish is a nice, cheap alternative for breakfast as it uses potatoes as its main ingredient. Ingredients:
4 small potatoes, peeled |
oil for frying (about 1-2 tbsp) |
4 tortillas, soft taco sized or larger |
4 slices bacon, cooked to desired doneness |
salt |
pepper |
garlic powder |
salsa |
sour cream |
grated cheese |
Directions:
1. Cut potatoes into uniform cubes, 1/2-1 inches. 2. Heat oil in frying pan over medium high heat, add potatoes. Sprinkle with salt, pepper and garlic powder. Cover and cook over medium low heat for eight minutes. 3. Remove lid, stir potatoes and cook for another eight minutes, stirring occasionally. 4. Spoon into tortillas and top with one slice of cooked bacon each (optional). 5. Serve warm with salsa, sour cream and cheese. |
