This is just one of the many fillings i use for this dish. It can be changed to suit your requirements. it takes a bit of time but is really worth it in the end. Ingredients:
4 large potatoes, boiled and mashed |
4 jalapenos |
grated cheddar |
grated mozarella |
2 tbs unsalted butter, melted |
3 tbs of chopped chives |
3 tbs of chopped coriander |
breadcrumbs |
2 tbs of chilli powder |
salt to taste |
olive oil |
Directions:
1. put mashed potatoes in warm oven to dry (approximately 10 minutes) 2. Deseed jalapenos and chop 3. in a bowl, mix grated cheeses with chopped jalapenos and chives 4. add the melted butter and mix 5. roll and squeeze into balls 6. Mix the mashed potatoes with the coriander 7. roll and coat the cheese balls with the potato mixture 8. ensure that the potato coat is at least 1cm thick 9. mix breadcrumbs with chilli powder 10. roll balls in crumbs 11. deep fry in olive oil |
