I've had this recipe since I was a teen, not sure where it came from as I've handwritten it in an exercise book. This is a little different to a normal potato casserole given that the potatoes are grated. Ingredients:
4 potatoes, peeled & grated |
1 tablespoon parsley flakes |
3 eggs |
60 g butter, melted |
1 onion, finely chopped |
1/3 cup plain flour |
salt |
pepper |
Directions:
1. Drain off as much liquid as possible from potatoes, then toss with the onion, parsley and flour. 2. Beat eggs with a little salt & pepper and then add to potato along with the melted butter and mix to combine. 3. Pour into a well greased casserole dish and bake at 200.C for approx 10 minutes. 4. reduce heat to 180.C and cook for a further 30 mins or until golden & set. |
