Ingredients:
3 tablespoons butter or margarine |
2 cups ore-ida potatoes o'brien |
6 large eggs |
2 tablespoons milk |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1 cup (4 ounces) shredded cheddar cheese |
6 bacon slices, cooked and crumbled |
Directions:
1. Melt butter in a 10-inch nonstick skillet over medium heat; add potatoes, and cook 10 minutes or until golden brown. 2. Stir together eggs and next 3 ingredients; pour over potatoes. Cook frittata, gently lifting edges with a spatula and tilting pan so uncooked portion flows underneath, until set. If center remains uncooked, carefully turn frittata over, and cook 5 minutes. Remove from heat, and sprinkle with Cheddar cheese. Cover with aluminum foil, and let stand 5 minutes. Sprinkle with crumbled bacon, and serve immediately. |
